Sodium citrate, also known as E331, is a tri-sodium salt of citric acid. In food products, it is commonly used as a flavor and preservative. In pharmaceutical formulations, it is used as a buffer, emulsifier and sequestering agent. It’s soluble in water and becomes deliquescent upon contact with moist air. It’s insoluble in alcohol.
